Job Description:
• Sharpening and adjusting butchery cutting equipment;
• Using a variety of meat cutting equipment – slicing machine, band saw, boning knife, skewer, and twine to prepare various types of cuts;
• Receiving, inspecting, and storing meat supply upon delivery;
• Cutting, boning and trimming meat in a way that keeps wastage to a minimum;
• Weighing, wrapping, and displaying cuts of meat;
• Cutting carcasses, sides, quarters and preparing meats to specification or customer’s orders;
• Giving customers advice on how to properly wrap up and store the meat they buy;
• Cutting and trimming meat from larger, wholesale portions into steaks, chops, roasts, and other cuts;
• Preparing special displays of meats and poultry in shape, lace and tie roast;
• Carrying out temperature checks on meat and recording the readings accordingly;
• Cutting poultry into parts;
• Removing bones from meat and grinding meat;
• Preparing and seasoning processed meat cuts such as salami and sausages;
• Shaping, rolling, and tying roasts, preparing sausages;
• Curing, smoking, tenderizing and preserving meat;
• Storing meats in refrigerators or freezers at the required temperature;
• Keeping inventory of meat sales and order meat supplies;
• Cleaning equipment and working areas to maintain health and sanitation standards;
• Training other meat cutters;

Employment Requirements:
• 5 years or more of experience as a Butcher;
• No formal education required;
• Knowledge of English language; Italian knowledge is an asset;

Essential job functions:
• Manual dexterity to use sharp knives and meat cutting equipment;
• Good hand control in order to make proper cuts of meat that are the right size;
• Physical ability to lift and carry heavy boxes of meat up to 50 pounds.
