In this talk, Chef David Wolfman will explore how Indigenous knowledge has shaped sustainable land and food practices and how these methods can be applied today to combat climate change. Examples of methods that will be discussed include Indigenous fishing, forestry, and agricultural techniques. Chef Wolfman will also share personal insights on sustainability in Indigenous cuisine, followed by a Q&A at the end of his talk.
Chef David Wolfman, from Xaxli’p First Nation, has reshaped Canada’s gastronomic landscape and global perceptions of Indigenous and North American cuisine. Chef Wolfman was the first of many to have an Indigenous catering enterprise in Toronto. Outside of the kitchen, Chef Wolfman shares his love of food, family and friendship through education. In 2027, he released a cookbook with his wife, Marlene Finn, called “Cooking with the Wolfman: Indigenous Fusion,” which won many awards.
