Job Description:

  •   Assume full responsibility for the kitchen in the absence of the Head Chef
  • Maintain records of food costs, invoices, sales, and inventory
  • Analyze operating costs and other data
  • Demonstrate new cooking techniques and new equipment to cooking staff
  • Supervise activities of cooks and other kitchen workers
  • Develop new menus featuring culturally relevant and authentic Jamaican dishes alongside Chef
  • Instruct cooks in the preparation, cooking, garnishing and presentation of food
  • Prepare and cook meals or specialty foods
  • Order food and kitchen supplies and receive and store orders
  • Arrange for equipment and building repairs
  • Estimate food requirements and food and labour costs
  • Ensure food meets quality standards
  • Recruit and hire staff
  • Train staff in preparation, cooking and handling of food
  • Leading/instructing individuals
  • Inspect kitchens and food service areas
  • Clean kitchen and work areas: Ensure that all equipment is kept clean and kept in excellent working condition
  • Coordinate timing of dish completion with other cooks
  • Label and store or dispose of all unused items
  • Oversee and ensure that restaurant policies on employee performance appraisals are followed and completed on a timely basis.
  • Perform duties in accordance with Ontario Health and Safety Standards
  • Conduct Line Checks and Pre-shift meetings prior to service
  • Foster an atmosphere of respectful communication, cooperation and positivity among all team members

Requirements:

– Education: Completion of high school is required

– Experience: A minimum of 5 years of experience as a cook is required. In the event that the candidate does not have 5 years of experience then equivalent credentials, training OR cook’s trade certificate is required.

– Supervisory experience in commercial food preparation as a sous-chef, specialist chef or chef is required.

– Experience and knowledge of Jamaican cuisine is a strong asset

– Experience in high volume kitchen is a strong asset

Salary: $34.07 hourly, 40 Hours per week.

Important information: Flexibility in schedule is required. Position requires extended work hours, including evening, night, weekend, and holidays as needed. The candidate will work 6 to 10 hours a day within the rotational shifts that are available from 9:00 AM up to 1:00 AM.
